Turkish Eggs with Garlicky Yogurt

Have you had Turkish Eggs before?

A pillowy-soft poached egg atop creamy yogurt mixed with chopped garlic, then drizzled with paprika infused oil/butter – it’s the perfect meal for one.

Then you do the right thing and sop up the creamy, eggy, yogurty goodness with some good flatbread, like this grilled one, or this yogurt one.

Oh my… This is quickly becoming my new favourite egg way.

Turkish Eggs (from here)

serves 1

1 poached egg
1/2 cup yogurt
1 tsp paprika
1/2 tbsp butter or oil
fresh mint, torn up
salt
pepper
1 clove of garlic, minced

Mix yogurt with minced garlic. Spread on serving plate.

Heat butter. When it sizzles, add paprika. Gently warm through. Remove from heat.

Top yogurt with poached egg. Drizzle paprika butter over. Sprinkle with mint, salt and pepper.

I can never get enough of eggs! I have a similar recipe for this dish in a Sara Moulton cookbook. It is one of those things I have wanted to try for a while now. Thanks for jogging my memory and inspiring me!

This is the type of dish I could eat every day. Eggs, flatbread and garlic – what’s not to like? Well, may garlic breath :D

I haven’t had Turkish eggs before, but I have had garlicky yogurt with fried eggs, and the flavor is fantastic. Your dish looks great!
